Sweet Corn Bread

Introduction

For those who love fluffy cornbread. Not as grainy of a texture as regular cornbread. Nice and sweet! For those who love fluffy cornbread. Not as grainy of a texture as regular cornbread. Nice and sweet!
Number of Servings: 12

Ingredients

    1 cup cornmeal
    1 1/2 cup flour
    3/4 cup sugar
    1 1/2 Tbsp baking powder
    1 tsp salt
    1 1/2 cup skim milk
    1 large whole egg
    1 egg white
    3 Tbsp oil
    **Optional honey-butter coating:
    2 Tbsp butter/margarine (melted)
    2 Tbso honey

Directions

Preheat oven to 400. Combine dry ingredients, stirring to blend. Add in milk, egg and egg white, and oil and stir with wooden spoon until fairly smooth. Pour into greased 9 inch pie pan or 9x9 baking dish. Bake until golden brown on top and toothpick inserted in center comes out clean, approx. 25-30 minutes. **For optional honey-butter coating: melt butter and stir in honey. Brush over top of cornbread while still warm. Let cool 10 minutes and serve. Makes 12 servings.
