Healthy Chicken Stir Fry

Ingredients

1 lb of chicken breast cut into strips
marinade: Any soy/ginger/lemon store bought I find + onion powder, chopped garlic, grated ginger if you have, or just sprinkle some ground ginger. Chopped scallions.
3 tb Canola oil (divided)
3 tb Sesame oil (divided)
Vegetables: choose a mix. I used:
1 red pepper
1/2 green bell pepper
2 stalks of celery
A handful of fresh button mushrooms
4 scallions
1/2 bag frozen snap peas
Directions
1st:
In a WOK:
2 tbsp canola oil heat over medium flame
1 tbsp of sesame oil
saute marinated chicken (better to marinate for a while, but even if it is just dredged in the marinade is fine too.)
Saute til cooked through (about 6 minutes)
Chop vegetables while chicken is sauteeing (But be careful not to burn the chicken ;) )
2nd: remove chicken
Add remaining oil
Add celery, pepper, green onion (Scallion).
Add snap peas.
Add mushrooms last.
saute a few minutes
Add 1 cup of chicken broth/canned chicken broth works too. Even bouillion works!
Mix together 3 tbsp soy with 2 tbsp corn starch.
Add to mixture.
Cook a little longer.
Add chicken back.
Feel free to add some more "marinade" mixture to the mix (but not what you used to marinade the chiken with!)
Cover and simmer.
Allow "juice" to thicken.
Serve over rice.
