Kitchen Sink Salad

Ingredients

    Spinach
    Cauliflower
    Brocolli
    Carrots
    Cucumber
    Green, yellow & red bell peppers
    Canned corn

Directions

Basically I take all the veggies I love, chop them up and throw them all in together!
It is pretty time consuming, chopping everything up. Sunday nights I wil spend an hour or so making enough for the entire week. I keep it sealed in a big tupperware tub in the fridge and have fresh salad throughout the whole week. I will distrubute smaller portions into tupperware to throw in my lunch bag or eat for a light dinner. I've found the best dressing with this "receipe" is Wishbone's Low Fat Italian. It adds just enough kick to the salad with only a small amount of dressing.
