Red Bean & Sausage & Rice Soup

Introduction

This is a Weight Watchers recipe that I thought looked great so I pulled it over here and adjusted a little bit. This is a Weight Watchers recipe that I thought looked great so I pulled it over here and adjusted a little bit.
Number of Servings: 6

Ingredients

    2 garlic cloves
    1 medium onion, chopped
    1 celery stalk, chopped
    1 medium green pepper, chopped
    1 15 oz. can kidney beans, rinsed and drained
    1 14 1/2 oz. can diced tomatoes, undrained
    16 oz. smoked sausage
    1/4 tsp dried thyme
    1/4 tsp black pepper
    1 tsp salt
    6 c. chicken broth
    1 c. uncooked white rice, converted variety

Directions

Combine all ingredients in slow cooker; set on high and cook for 4 hours. about 2 c. per serving.

You can kick it up with cayenne or red pepper flakes.
