Chicken & Garbonzo Beans

Ingredients

    2 tsp flour
    salt & pepper
    5 ounces skinned and bones chicken breasts cut into 3x1 inch pieces
    1 tsp margarine and olive oil
    1/2 cup diced green bell pepper
    1/4 cup diced onion
    1 cup diced tomatoes
    8 ounces drained canned chick-peas
    2 tablespoons powdered chicken bullion

Directions

In large plastic bag combine flour, salt and peper; add chicken and shake until pieces are slightly coated. In large nonstick skillet comibine margarine and oil, heat over high heat until margarine is bubbly and hjot; add chicken and saute' until lightly browned on all sides. Remove chicken from skillet and set aside.

Reduce heat to medium; add green pepper and onion to skillet and cook; sitrring occasionally, until vegetables are tender. 1 to 2 minutes. Add tomatoes, chick-peas and broth mix and stir to combine; return chicken to skillet. Reduce heat to low, cover skillet and let simmer until tomatoes are reduced to a puree, 10-15 minutes
