Homegrown and Canned Spaghetti Sauce

Ingredients

    6-1/2 to 7 cups onions, finely chopped
    10 garlic cloves, finely minced
    4 cups chopped bell pepper (optional)
    2/3 cup olive oil
    30 cups ripe peeled, cored, and chopped tomatoes
    2-1/2 cups water (optional)
    30 ounces tomato paste
    7 beef bouillon cubes
    3 tablespoons leaf basil, crumbled
    10 whole bay leaves
    2 tablespoons salt
    6 tablespoons oregano
    2/3 cup sugar
    5 tablespoons thyme

Directions

Sauté onions, peppers, garlic in oil. Stir in tomatoes and cook for 5-10 minutes in a large kettle. Then stir in rest of the ingredients. Simmer at least 1 hour or until desired
consistency. May add Parmesan cheese (not included in nutritional count) or more spices to taste.

Pressure can 30 minutes at 10 pounds pressure, or 30 min. in boiling water bath.

Yields approximately 7 quarts (4 servings per quart)
