Chicken-Chili-Corn Fritter

Ingredients

    1 5oz can of shredded chicken
    3 ounces shredded cheddar cheese
    1/2 cup drained canned whole kernel corn
    1 large egg
    3 tablespoons dried plain bread crumbs
    1/4 tsp: garlic powder, onion powder, chili powder and baking powder
    dash salt and ground pepper
    1 tablespoon olive/vegetable oil

Directions

In large mixing bowl combine all ingredients except oil; let stand a few minutes for flavors to blend.

In large nonstick skillet heat oil over medium heat until hot but not smoking; spoon mixture into skillet, forming 6 equal fritters. Using the back of a spoon, press top of each fritter to flatten slightly; cook until browned on bottom. Turn fritters over and cook until browned on other side.
