Brownie Muffins

Introduction

Well, these are definitely NOT low fat or healthy, but they sure hit the spot when you really want a treat. You can make these in a regular pan, but I like to bake them in a muffin tin so I can control my portions when I do indulge. Usually, just half a "muffin" will do. Well, these are definitely NOT low fat or healthy, but they sure hit the spot when you really want a treat. You can make these in a regular pan, but I like to bake them in a muffin tin so I can control my portions when I do indulge. Usually, just half a "muffin" will do.
Number of Servings: 16

Ingredients

    2 sticks butter, melted
    2 cups sugar
    2 tsp vanilla
    4 eggs
    1 cup cocoa powder
    1 cup flour
    4 tbsp vegetable oil

Directions

Heat oven to 325. Grease muffin pans or use a 9x13 baking pan.
Cream butter, sugar, vanilla, and eggs.
Stir in cocoa powder, flour, and oil. (DO NOT use a mixer for this step) Stir until just combined.
Pour into prepared pan and bake 25-30 minutes. (The baking time was given for a 9x13 pan. When I made mine using the muffin tin it still took at least 25 mintues to get done)
