Introduction

Throw everything in the slow cooker on low for 6 hours. Nice to serve with a grilled cheese sandwhich.

This can also be cooked on the stove in under 30 minutes

Number of Servings: 6

Ingredients

    4 cups eggplant, peeled and cubed (soak in salty water for 30 minutes to remove bitterness)
    6 baby zucchini, cleaned and diced (leave skin on)
    2 cups onions, chopped
    2 cups tomatoes, diced (I used a no-name canned variety)
    3 green peppers, chopped
    6 cloves garlic, minced (or 2 tbls)
    1 tsp oregano, dried
    1 tbl basil
    1 pinch salt to taste

Directions

Makes 6, 2 cup servings.

Prepare all your veggies.
Throw into a slow cooker, turn it on and walk away.
