Galley Corn Bread

Introduction

A modified version of the cornbread recipe in The Mystic Seaport Cookbook. I exchanged 1 cup of all purpose flour for 1 cup of whole wheat flour. I have also added creamed corn to the mixture. Ingredients

    1 cup yellow cornmeal
    1 cup whole wheat flour
    1 cup all purpose flour
    1 tbsp. baking powder
    3/4 cup sugar
    2 eggs, beaten
    1 tbsp butter, melted
    1 1/4 cups 1% milk
    1/2 cup creamed corn
    1 tsp. vanilla extract

Directions

Makes 12 generous servings.

Preheat oven to 425 degrees F. Sift together flours, baking powder and salt. Beat sugar and eggs until smooth. Add butter, milk, creamed corn and vanilla. Beat in dry ingredients. Pour into greased shallow pan (14x9) - I used cooking spray. Bake until golden, about 20 minutes.

If you are planning to spread butter or margarine on the finished cornbread, be sure to soften the spread first and add the calories.
