IntroductionThis is a very simple hearty soup. And it actually tastes better the next day! This is a very simple hearty soup. And it actually tastes better the next day!
6 cups vegetable broth (I use home-made, but any fat-free variety would be great.)
7 small potatoes (or 3-4 large ones) chopped roughly
3 leeks (sliced thinly)
3-4 cloves of garlic
A splash of 'milk' of your choice (i used original unsweetened almond breeze)
Dill, Salt, Pepper, or other herbs and spices of your choices
In a frying pan, sautee the garlic and leeks with a couple tbsps of water (no oil needed). Once they are soft, add to the soup pan with the broth and potatoes. Add your splash of 'milk', dill, salt, pepper, and let it all simmer for about 10-15 minutes.
Makes about 10 1-cup servings.
