Cheesy Potato Soup

Ingredients

5 c. diced potatoes
1 c. shredded carrots
1 c. chopped onion
1/2 c. chopped celery
3 cups of water
12 T. Butter
3/4 cup flour
4 c. 1% milk
8 oz. shredded cheese
3 tsp. chicken boullion
Directions
Boil water, potatoes, celery, onion, and carrots for about 15 minutes or until potatoes are soft. DO NOT DRAIN
In a seperate pot, melt butter, stir in flour, cook for 30 seconds. Add milk, cheese, bouillion, and stir until combined. Cook over medium heat, stirring constantly until mixture thickens. Combine veggies to milk mixture and stir and cook for 10 minutes longer.
