Ingredients

    1 tbs Canola Oil
    1 Bag Trader Joe's Fire Roasted Bell Peppers and Onions (Alternatively, use 1 Red, 1 Yellow, 1 Green Fresh Bell Peppers and 1/2 Sweet Onion, chopped coarsely)
    1 Small Tomato
    1 Can Black Beans, water drained
    2 slices Avacado
    1/4 cup shredded 2% Cheddar Cheese
    4 whole wheat taco-sized tortillas
    Chili powder to taste

Directions

Chop fresh vegetables and sautee onion, peppers and tomato in medium sized sauce pan until frozen veggies are tender. Add can of Black Beans and Chili powder to taste. Boil off excess liquid from frozen veggies and black beans until you have the consistency you want for your fajita filling. Scoop 1/4 of fajita filling into each taco, then top with a small slice of avacado and spinkle with cheese, fold and eat.

Each serving is two fajitas. Enjoy!
