Introduction

Number of Servings: 8

Ingredients

    1 lb boneless leg of lamb, diced
    1 can Fire Roasted Diced Tomatoes w/juice
    1 cup pure pumpkin
    4 1/2 cups cauliflower (1/2 large head)
    2 tsp garam masala
    2 tsp ground coriander
    2 1/2 cups chopped red onion (1 large)
    1 tbsp olive oil
    1 tbsp minced garlic
    1 can low sodium (or rinse) kidney beans (1 1/2 cups)
    2 tbsp Patak's Spicy Ginger and Garlic marinade (may substitute any ginger garlic paste)
    4 cups water

Directions

Heat up olive oil in stock pan. Add onions and lamb - saute for 5-10 minutes. Add garlic and spices. Simmer for another 5 minutes. Add rest of ingredients and half the water. Let simmer,, stirring periodically. Cook until lamb is tender. Add additional water as needed. I simmered mine for 2 hours.


Made 8 1-cup servings.
