Chopped Salad

Introduction

I love this salad because it is an easy way to use up the last of veggies that are about to go bad. It is also a fun change from a regular salad. (You can use any of these ingredients, as well as fresh peas, cauliflower... anything crunchy. Any combo of 4 or 5 ingredients will taste great.) Number of Servings: 4

Ingredients

    1 cup of cabbage
    1 small summer squash
    1 stalk of broccoli with tough, outer skin removed
    1/2 of a small cucumber
    1/4 of a green bell pepper
    1/2 of one small onion
    2 Tbl Light ranch dressing
    salt and pepper to taste

Directions

Chop all vegetable ingredients and put in a bowl. Mix in salad dressing.

Serving size is about 1 cup.
