Introduction

A mix of fresh veggies and chicken to be put over whole wheat pasta! A mix of fresh veggies and chicken to be put over whole wheat pasta!

Ingredients

    Ingredients:
    Chicken Breast, boneless/skinless 1.5 pounds
    Cannellini Beans, 1 can drained and rinsed
    Del Monte Petite Cut Diced Tomatoes, 1 can
    Carrots, raw, 1 cup, diced
    Onions, raw, 1 cup, chopped
    Zucchini, 1 cup, diced
    Spinach, fresh, 2 cup
    Prego Spaghetti Sauce, Traditional, 1 cup
    Olive Oil, Extra Virgin, 2 tbs
    Salt, (sea) 1 tsp
    Pepper, black, 1 tbsp
    Garlic powder, 1 tsp
    Parsley, dried, 3 tbsp
    Oregano, ground, 1 tbsp
    PAM spray, Olive Oil

    Whole Wheat pasta to serve with... (not included in nutritional info)

Directions

Trim chicken and cut into one inch cubes. In a large frying pan, spray with Olive Oil PAM spray and cook chicken until cooked through. Remove from pan. Put Olive Oil in pan and add onions, carrots, and zucchini and cook for about 5 mins. Add tomatoes, beans and spaghetti sauce and stir through, cooking for 5 mins. Then add spinach, salt (sea), parsley, garlic powder, pepper, and oregano. Stir often until spinach is wilted, about 5-10 mins. Makes 6- one cup servings.

Serve over whole wheat pasta! One cup of pasta and one cup of Chicken and Veggies is approx 550 calories, 9g fat and 42 PROTEIN!
