Cabbage Strata from Biggest Loser Cookbook

Number of Servings: 6

Ingredients

    6 cups Cabbage Shredded
    8 slices center cut bacon
    1 cup brown rice
    1 1/2 pounds Chicken
    2 cans (8 oz) tomato sauce
    1/2 cup water
    1 onion

Directions

cook bacon in skillet, set aside. Use 1 tbs of bacon greese to cook up rice and onion. Place 3 cups of cabbage in 8x8 baking dish. Place rice mixture on top. Cook Chicken in skillet, add salt and pepper. Place in dish. Add rest of cabbage.
In the skillet add tomato sauce and water, bring to a boil. Use a ladel to pour tomato sauce evenly over dish. Place tinfoil on top and bake in oven at 400 degrees for 45 minutes. Take foil off and cook for another 10 minutes.
Cut evenly into 6 pieces. Add hot sauce if desired.

    This is soooo excellent. I didn't think it was going to be great, but liked the idea of a substantial size for not too many calories. EVERYBODY loves it!!! husband and 10 year old request it often. It's a keeper!! - 11/3/10

    If you like stuffed cabbage, you are going to love this dish. 1 serving size is pretty substantial too. Yummy. Use the ground chicken, it makes a difference. - 7/17/10
