Split Pea Chicken Stew

Introduction

Sometimes you want to hit that protein craving hard. This is a virtually salt-free recipe (sorry, vegans, not for you!).

If you like it a little creamier, pour off 2C of the soup and split peas, leaving out the carrots and chicken. Blend completely, then add back in.

If you want a vitamin C (and spice) kick, toss in 14-16 rinsed dried red chili peppers, with seeds, chopped into 2" segments. (Add AFTER the water, so you don't mace yourself in the privacy of your own home!)

Ingredients

    3 large boneless skinless chicken breasts diced into 1.5"-2" cubes
    2T garlic powder
    4 medium carrots
    1 large onions
    1lb. dried split peas
    2T ground cumin
    4t Tabasco or 2T ground cayenne pepper
    1T paprika
    1/3C canola oil

Directions

1. Heat the oil, add the chicken, stir until browned, then add all the spices. When everything's well mixed, add the onions.
2. Stir well,, then add the rinsed, dry split peas. Stir continuously for about 3 minutes.
3. Add ~3Q water, bring to a boil
4. Add carrots, bring down to a simmer, stir every 5 minutes for 30 minutes.
5. Done.
