Peach Chutney

Introduction

Number of Servings: 16

Ingredients

    5 cups chopped & peeled Peaches (about 1 3/4 pounds)
    1 1/2 cups finely chopped Red Onion
    1/2 cup packed Brown Sugar
    1/2 cup White Wine Vinegar
    3 tbsp. minced ginger
    1/2 cup chopped fresh Cilantro
    2 tbsp. fresh Lime Juice

Directions

Combine the first 5 ingredients in a saucepan and bring to a boil. Cover, reduce heat and simmer for 45 minutes.
Remove from heat, stir in cilantro and juice. Cool to room temp. and serve.

Makes 4 cups (each serving is 1/4 cup)

Tastes great with grilled pork or chicken. Can also be used to perk up a turkey or ham sandwich. Will store in fridge for up to 1 week.
