Shopska Salad

Introduction

Balkan Recipe. This light and very nutritious salad is a hit at a potluck!

Number of Servings: 10

Ingredients

    Cucumbers; 2 (we use English)
    Tomatoes; 2 med.
    Red Bell Peppers; med. or large
    Feta Cheese, firm (goat was used for the nutritional info) to taste. We used 8 oz
    Wine Vinegar 1tbs
    Salt; 1/2 tsp

Directions

Seed the peppers and tomatoes (and cukes if you don't use English). Dice all veggies to about 1/4 inch.

Mix together vinegar and salt and sprinkle over stirred veggies.

Dice feta to about 1/4 inch and layer on top.

Can be made the day ahead. Refrigerate until used.
