Puffed Apple Pancakes

Found and revised from the Taste of TN, Tennessee Magazine.** Note, I wasn't too pleased with the entire appearance and consistency of this Version I've given. My recommendation and trial later will be to chop the Apples instead and add them to the Mixed Batter and cook this as an Original Pancake Batter in a Non-Stick Pan. Ingredients

Apples, fresh, 2 cup, quartered, sliced and peeled.
Butter, salted, .25 cup ; melted
Buttermilk, lowfat, 1 cup
Egg, fresh, 1 cup (4 large eggs)
*Splenda Sugar Blend for Baking, 3 Tbsp.
Vanilla Extract, 1 tsp
Salt, .1/4 tsp
Cinnamon, ground, 1 tsp.
*Wheat flour, white, all-purpose, enriched, calcium-fortified, 1/2 cup
*Whole Wheat Flour, 1/2 cup
Brown Sugar, 3 Tbsp. packed
Directions
Pre-heat Oven 425*, place butter into a glass 9X13 baking dish in the oven while heating to melt.
Core, peel, and slice apples very thin (Granny Smith are recommended). Layer these along the bottom of the pan with the melted butter.
Meanwhile, proceed with the remaining ingredients mixing them in a large bowl, dry ingredients first ( reserving the Brown Sugar for the final Topping!) and adding the wet and mixing until the batter is smooth. Pour this over the top of the Apples and Sprinkle the entire mixture with the reserved Brown Sugar and Serve. This is actually so Sweet and Buttery I really don't recommend an Syrup in the eating :)
