Chicken & Black Bean Burritos

Ingredients

    1 pk (215g) Old El Paso Mexican Rice
    1 tbsp extra virgin olive oil
    1 lb boneless, skinless chicken breast, cut into strips
    1 pk taco seasoning mix, low sodium
    2/3 cup water
    1 can (540 ml) black beans, rinsed and drained
    1 medium red pepper, chopped
    5 green onions, chopped
    1 tsp dried cilantro
    90g light marble cheese, shredded
    1 pk large soft tortillas (8 count)
    Salsa, optional
    Sour cream, optional

Directions

In medium saucepan, make rice according to package directions but omit the margarine.
Meanwhile, in a large, non-stick fry pan heat oil over medium-high heat. Add chicken strips and cook until chicken is no longer pink, about 5-7 minutes. Stir in taco seasoning package and 2/3 cup water. Stir and cook about 5 minutes until most of the liquid is absorbed.
Add beans, red pepper, onions and cilantro to chicken. Then add hot mexican rice. Stir and heat for a few minutes.
Warm tortillas according to package directions. Spoon chicken mixture on each tortillas. Top each with some shredded cheese. Fold bottom and then roll up from side. Serve with salsa and sour cream if desired.
Makes 8 burritos.
