1 package of Jennie-O Italian Sausage Links 1 lb bag of dried blackeyed peas 1 can of green beans or 2 green bell peppers 1 tbsp of garlic powder 2 russet potatoes 1 can of rotel 1 tsps of beef or chicken soup base 8 cups of water
Rinse and sort peas. Place in pot with 8 cups of water. Bring to a boil. Remove from heat, cover and let stand for 1 hour. While presoaking beans, cut potatoes into cubes. Drain and rinse peas. Return peas to pot, cover with 8 cups of water. Add the rest of the ingredients, except green beans. Allow saugage time to cook through, remove, cool, cut into small peices and return to pot. Allow to simmer until peas are as soft as desired. Drain green beans and add to peas allow to heat through. I serve this over steamed rice.
