Refrigerator Soup

Introduction

This is a great soup that will use up the veggies in your refrigerator at the end of the week. It tastes different every time depending on what you put in it. This is what I made this week. Number of Servings: 8

Ingredients

    Salt, 1 tsp (remove)
    Olive Oil, 1 tbsp (remove)
    Cabbage, fresh, 2 cup, chopped (remove)
    Carrots, raw, 3 large (7-1/4" to 8-1/2" long) (remove)
    Celery, raw, 3 cup, diced (remove)
    Mushrooms, fresh, 0.50 cup, pieces or slices (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Parsnips, 1 parsnip (9" long) (remove)
    Butternut Squash, 2 cup, cubes (remove)
    Water, tap, 6 cup (8 fl oz) (remove)
    Potatoes Raw, 2 or 3
    Or use whatever fresh vegetables that you have in the refrigerator at the end of the week. Even salad greens may be added near the end of the cooking time. Fill the soup pot. Sometimes I add a can of diced tomatoes as well and/or a can of beans.

Directions

Saute sliced onion in olive oil in a soup pot. Add mushrooms and saute 1-2 minutes more. Add water and 3 pinches of salt. (I often add a 1-2 inch piece of kombu - dried sea kelp- with the water.) Cut vegetables in small pieces and add to water. Bring to a boil and boil gently for about an hour or until vegetables are tender. Fresh herbs may be added at the end of the cooking time,(Whatever you are fond of) or dried herbs may be added near the beginning. Salt and pepper to taste.
