Number of Servings: 4

Ingredients

    4 (4-oz) skinless salmon fillets, about 1" thick
    1/4 teaspoon salt
    dash black pepper
    Cooking spray (I prefer olive oil spray)
    2 cups cherry tomatoes, halved
    1/2 cup zucchini, finely chopped
    1 tablespoon olive oil
    1 (2 1/4-oz) can sliced ripe olives, drained

Directions

Makes 4 servings
Preheat oven to 425. Sprinkle fish with salt & pepper on both sides. Place in an 11- x 7-inch dish coated with cooking spray. Combine tomatoes and remaining ingredients in a bowl; spoon over fish. Bake for 22 minutes.
