Omelets to go (w/ Egg Beaters)

Ingredients

    1-1/2 C. Egg Beaters (=6 Large Eggs)
    .5 cup green pepper diced
    .5 cup onions diced
    .5 tomato diced
    4 slices turkey bacon cut into small pieces
    1 tsp hot sauce
    black pepper to taste
    2 oz low fat cheese shredded

Directions

Makes 9 Servings

Preheat oven to 350 and grease muffin tins. Combine all ingredients except cheese in a bowl. Equally divide mixture among 9 muffin cups. Bake 35 min and then top w/ cheese and bake 10 more. Let rest 5 min in muffin cups and serve.
