Strawberry Spinach Smoothies

This is a favorite in our house. You can't taste the spinach -- promise! Great way to get a couple of servings of fruits/vegetables first thing in the morning. This is a favorite in our house. Ingredients
-
1.5 cups of liquid (I usually do 1 cup of water and 1/2 cup of low fat yogurt; but you could also do coconut milk, soy milk, orange juice, etc.)
3 large handfuls of fresh baby spinach
1 cup of frozen strawberries
2 Tbsps. agava nectar (you can also use honey)
Directions
Unless you have one of those super-blenders (Vita-Mix,etc.), blend the spinach with the liquids first. Once thoroughly blended, add the strawberries and agava nectar. Blend well and serve. Makes two 12 oz. servings.

I usually make a variation of this, adding more berries, soy protein shake powder and almond milk. (this will up ur calories) Sometimes, if I have some on hand I throw in some chopped parsley as well. Lots of protein to keep me from snacking on the wrong foods mid-morning! Thanks for the recipe! - 8/29/10
