Introduction

Number of Servings: 16

Ingredients

    6 oz finely chopped canadian bacon
    6 slices finely chopped reduced fat swiss cheese
    1/2 onion, finely chopped
    6 eggs, beaten
    salt and fresh ground pepper to taste
    1 TBSP dried Italian herb seasoning
    1 TBSP dijon mustard

Directions

Preheat oven to 375*
In a bowl, mix together the chopped onion, cheese, canadian bacon, and dijon mustard. In another bowl, beat the eggs with the salt and pepper. Spray 2 and a half mini muffin pans with nonstick cooking spray. Fill the 32 sprayed cups about half way with the ham/cheese mixture. Then, pour in the beaten egg into each cup, evenly dividing. Bake at 375* for 12 min. Makes 32 mini frittatas, 2 per serving. But feel free to eat more, because they are pretty low in calories!
