2 chicken breasts cut in half (4 pieces) 2 ounces cheddar cheese 2 ounces mozerella cheese (part skim) 4 whole green chiles (seeded) or canned 1/4 cup seasoned bread crumbs 1 Tbls lite butter spread 1 cup green chile sauce No stick cooking spray
Pound chicken breast with a meat tenderizer until fairly flat. Divide the cheeses between the four pieces of chicken and lay a chile on each piece. Roll the chicken breast with the cheese and chile inside. Lay in casserole dish sprayed with cooking spray. Sprinkle the bread crumbs over the chicken and put the butter spread in the dish. Bake in 350 degree oven for 25 minutes. Serve with green chile sauce poured over chicken.
