Apricot Pork Chops

Introduction

Lean pork chops with a small dollup of apricot preserves and dusted with a coating of panko breadcrumbs. Lean pork chops with a small dollup of apricot preserves and dusted with a coating of panko breadcrumbs.
Number of Servings: 4

Ingredients

    16 oz lean pork loin chops
    4 tbsp apricot preserves
    1/2 cup panko breadcrumbs
    2 tsp black pepper
    1 tsp salt

Directions

Preheat oven to 425.

Spray baking pan with non-stick cooking spray. Sprinkle pork chops with salt and pepper. On separate plate, spread the panko bread crumbs. Place 1 tbsp of apricot preserves on each pork chop. Place the pork chop, apricot side up, on the plate of bread crumbs and cover the top with panko (apricot side, bottom gets a light coating by resting on the plate).

Bake for about 20 minutes, or until pork appears done.

Makes 4 4 oz servings.
