Pastitsio (Greek Lasagna)

Submitted by: TRINABENIS

Introduction

Not low cal or low fat at all but traditional Greek dish and a regular at our family parties. Could definitely try ground turkey or morning star meat crumbles instead for less fat but add quite a bit more seasonings.

Also, the garlic is our own add in. Not in the family's traditional recipe but we like the additional flavor.

**Depending how deep your pan is and the size of the macaroni used, you might not be able to fit all the cream sauce. When I just made mine now I had 3/4 c of the cream sauce left. This lowered the calories to 415m, fat to 20 and protein to 21.

Ingredients

1.5 lb ground beef (used 93/7)
1lb pasta (No 4 macaroni if you can find/if not Penne or Rigatoni
    2 sticks butter
10 oz tomato paste (1/2 can)
    1/2 c grated Parmesan cheese
    1 med onion chopped
    cinnamon and nutmeg
    salt and pepper
    garlic powder (optional)
    *
1 qt milk (used 3c skim and 1c fat free half and half in calculation)
    2 large eggs (lightly beaten)
    4 tbsp corn starch
    1/8 tsp salt
    additional Parmesan (optional)

Directions

Cook macaroni in boiling salted water and drain

Saute chopped onion in a little butter, add ground beef and stir until brown. Then add tomato paste thinned with a little water. Add salt, pepper, cinnamon and nutmeg to taste.
Cook until meat is no longer pink

Melt 1 stick of butter and poor over drained pasta and mix.

Spread 1/2 pasta on bottom of 9x13 pan. Sprinkle some of the grated cheese on top. Top this with the beef mixture. Spread the rest of the buttered macaroni on top of this and sprinkle the rest of the cheese. Shake pan so the sauce will not penetrate the bottom.

Sauce: Place 1 stick melted butter in a sauce pan and add corn starch and milk, stirring constantly over low heat until thickened. Add salt and remove from heat.

When cooled slightly, add eggs and mix well.

Spread cream sauce over the macaroni. Sprinkle with additional grated cheese if desired.

Bake in oven at 350 for 40 - 45 minutes or until lightly brown on top. Let rest for at least 15 minutes before serving. Cut into 12 squares and serve.
