Red Velvet Oatmeal Cookies

Ingredients

1 (18.25-oz.) package Duncan Hines Red Velvet Cake Mix
2 cups quick cooking oats (or regular work fine too)
1/4 cup canola oil
3/4 cup fat free plain yogurt
2 large eggs
1/2 cup chopped pecans
1.5 tsp. vanilla extract
Directions
Preheat oven to 350 degrees.
Combine cake mix and oatmeal in a large bowl.
In a smaller bowl combine oil, yogurt, eggs and vanilla; add to try ingredients.
Sir in pecans.
Drop dough by rounded teaspoonfuls on ungreased or parchment-lined cookie sheet.
Base for 12 minues or until set. Remove to wire racks to cool
This recipe can be made with any type of cake mix - I've also done it with chocolate, and plan to try carrot cake.
