Stuffed Chicken Breast

Introduction

Based this on a recipe I read, but modified it! Super easy, yummy, and looks impressive. Based this on a recipe I read, but modified it! Super easy, yummy, and looks impressive.
Number of Servings: 4

Ingredients

    4 chicken breast, boneless, skinless. Cut into 6 oz servings.
    1/3c part skim ricotta cheese
    1/4c roasted red peppers (I keep a jar in the fridge)
    1 clove garlic, minced
    1 tsp Basil, dried
    Mrs Dash seasoning.

Directions

Pre Heat oven to 425

mix the ricotta, roasted red pepper, garlic and the basil in a bowl. set aside.

Cut the fat off of the chicken breasts. Put your hand on the breast, and hold it flat. Using a paring knife, cut a slit into the middle of the fat part of the meat. Cut a pocket into the middle of the chicken. Put a quarter of the ricotta mix into the slit you just created. Use your finger to 'stuff' it in to the middle.

Place in a 13 x 9 baking pan. Spray with pam. sprinkle the mrs Dash all over the chicken pieces. Bake at 425 for 25 - 30 minutes until done.


Note: I've also noticed that it would be really nice to cut the pieces into smaller servings. and stuff them... would make for a nice meal. We didn't eat the whole serving!
