Chicken and Cucumber Salad Pita

Introduction

I took a basic cucumber salad recipe and turned it into a pita sandwich with chicken. It is also great with tuna. I took a basic cucumber salad recipe and turned it into a pita sandwich with chicken. It is also great with tuna.
Number of Servings: 4

Ingredients

    2 english cucumbers
    1 small red onion
    1 pound chicken breasts
    2 whole wheat pitas (with pockets) divided in half
    1 +1/2 tablespoon salt
    1 tablespoon +1 teaspoon white wine vinegar
    1 teaspoon sugar
    2 teaspoons dried dill

Directions

Cut chicken breasts into small strips and cook in a nonstick pan until brown. Add salt to taste.
Once chicken is cooked, set aside to cool.

Cut the cucumbers lengthwise and then slice thinly.
Slice onions thin.
In a colander, add salt, cucumbers and onion and mix well.
Let sit for 15 to 20 minutes.
Press veggies gently to remove excess water.
Rinse well with cold water.

In a bowl, mix sugar and vinegar, then add cucumber mixture. Stir to coat.
Stir in dill.
Cut the pitas in half. (1 serving is 1/2 pita)
Divide cucumber salad and chicken into 4 servings and stuff pita pockets.

I like the chicken served cold, but it is also good warm.
