O'Brien Omelet

Introduction

Ingredients

    3 cups frozen cubed or shredded hash browns
    1 cup Southwestern egg substitute
    4 egg whites
    3 Tbsp FF cottage cheese
    .5 tsp salt
    .25 tsp pepper
    1 cup 2% shredded cheddar cheese
    Top with salsa

Directions

In 10" no-stick skillet, suate potatoes in FF cooking spray until browned on both sides. Beat egg sub., egg whites, and cottage cheese with salt and pepper. Pour over potatoes. Cook, uncovered, low for 15 minutes. Do not stir. Cover & cook 8 more minuntes until egg sets. Top with cheese for last 2 minutes. Cut into wedges and serve with salsa.
