Roast potatoes

Introduction

To accompany any roast dinner. - Cispy on the outside, soft in the middle. To accompany any roast dinner. - Cispy on the outside, soft in the middle.
Number of Servings: 3

Ingredients

    Approx. 800g raw potatoes (or 2 large potatoes)
    2 Tablespoons olive oil

Directions

Peel potatoes
Cut into quarters or smaller depending on size of potato
Boil till just starting to soften (approx 10 minutes)
Drain.
Put 2 tablespoons olive oil in a roasting pan in oven for 5 mins till hot.
Add potatoes and turn to cover in the oil.
Place back in oven for about an hour or until golden & crispy.
