Whole Wheat Spinach Lasagna

Introduction

A healthier version of lasagna that my family loves - including my 7 year old son! Even if you don't like spinach you will probably like this, the spinach flavor is not overpowering. A healthier version of lasagna that my family loves - including my 7 year old son! Even if you don't like spinach you will probably like this, the spinach flavor is not overpowering.
Number of Servings: 8

Ingredients

    Whole Wheat Lasagna Noodles
    1 26 oz. Jar - Spicy Red Pepper Arrabiata pasta sauce
    1 lb. Sorrento pt. skim ricotta cheese
    1 10 oz. package of frozen spinach (thawed and drained)
    2 large eggs
    1 8 oz. package of mozzarella cheese
    Italian pasta seasoning

Directions

Grease bottom of 13 x 9 inch glass baking dish. Mix Ricotta, 2 eggs, thawed & drained spinach in a bowl. Spread a layer of jarred sauce on bottom of greased baking dish. Arrange a layer of lasagna noodles on top of sauce to cover bottom of the dish. Spread 1/2 Ricotta mixture, 1/2 of Mozzarella cheese, and 1/2 jar of sauce. Repeat this layering process one more time and sprinkle Italian pasta seasoning on top. Cover tightly with foil and bake at least 1 hour at 350 degrees. Noodles should be tender to fork. Let stand 5 mintues to cool and cut 8 equal servings.

You can also use an 11 x 7 baking dish if you prefer a thicker lasagna. Be sure to cut the same amount of servings if you want the nutritional info. to remain the same.
