Banana-blueberry Muffins

Ingredients

    1 egg
    1/2 c. skim milk
    1/4 c. applesauce
    1 1/2 c. flour
    1/2 c. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 c. blueberries, frozen, unsweetened

Directions

Heat oven to 400 degrees. Grease or line muffin cups. Beat egg with fork; stir in milk and applesauce; add sugar and banana.
Blend dry ingredients and add to above mixture, stirring until flour is moistened. Gently stir in blueberries. Do not overmix. Fill muffin cups 2/3 full. Makes 14. Bake 20 to 25 min., or until golden brown.
