Candace's potatoes

Submitted by: ANTIQUELOVER

Number of Servings: 4

Ingredients

2 large potatoes, peeled and thinly sliced
    4 thin slices Prololone cheese
2 green onions, sliced including tops
    parsley
    2 teaspoons butter
    salt and pepper
1/4 cup flour, divided (whole wheat)
1/4 cup plain or seasoned bread crumbs
    1 tablespoon Parmesan cheese
    1 cup nonfat milk

Directions

Spray a small casserole dish with Pam. Peel and slice potatoes thinly. Place half of slices in dish, dot with 1 teaspoon butter, salt and pepper to taste and sprinkle with half the flour. Add half the green onions and fresh parsley to taste. Repeat layer. Pour milk over. (This may take more than 1 cup--you want it come just over the top of the poatoes) Put lid or Reynolds Wrap on top and bake at 400 degrees for 30 minutes. Remove lid and put breadcrumb/Parmesan cheese mixture on top. Lower heat to 350 degrees and cook, uncovered, for an hour, until brown on top and potatoes are done.
May use any kind of chesse. May leave off the breadcrumb topping if desired. I also like a dusting of freshly grated nutmeg on top when I put the breadcrumbs on.
