Low Fat Chicken Salad

Introduction

Ingredients

    1/2 chicken breast, cooked and cooled with breast and bone removed.
    1 T Duke's Light Mayo
    1/2 c. diced bell pepper
    1 Roma tomato, sliced
    2 T Sweet pickle relish or sweet salad cubes
    1/2 cup shredded lettuce
    Dash of salt and pepper

Directions

Boil chicken or cook in microwave. Cool chicken in refrigerator or ice water. Remove skin and bone. Chop chicken, add other ingredients and mix.

Can be divided into two servings; use for sandwiches or eat as a salad. For more protein, add chopped egg.
