Introduction

Number of Servings: 1

Ingredients

    1 tsp olive oil
    1 small baked potato, chopped into small pieces
    1/2 c green pepper, chopped
    1/4 c onions, chopped
    1/2 c mushrooms, chopped or sliced
    garlic powder to taste
    salt to taste
    pepper to taste
    2 oz (about 1/2 c.) shredded low fat cheddar cheese
    1 egg

Directions

heat oil in skillet. Add potatoes, green peppers, onions and mushrooms. Sprinkle with garlic powder, salt and pepper to taste. Saute until onions are somewhat clear and green peppers and mushrooms are soft. Avoid stirring constantly so that potatoes will stay in tact and get somewhat crispy. Reduce heat to simmer and push all ingredients together in the middle of the pan to form a mound. Top with cheese and cover. While cheese is melting fry an egg in a separate pan then place on top of cheese and serve.
