Menemen (Turkish dish)

Introduction

A quick and refreshing dish consisting of tomatoes, jalapeno peppers, and diced onions. A quick and refreshing dish consisting of tomatoes, jalapeno peppers, and diced onions.
Number of Servings: 6

Ingredients

    10 roma tomatoes
    2 jalapeno peppers
    1 large sweet onion
    3 tbsp corn oil
    salt and pepper to taste

Directions

Dice roma tomatoes and remove the majority of the seeds and liquid. Seed and dice jalapeno peppers. Dice sweet onion. Add onion and jalapeno's to a large skillet with 3 tbsp corn oil. Cook over medium-high heat until onions are tender (about 5 to 7 minutes). Add tomatoes, reduce heat to low, and cook for 10 more minutes. Serve family style in the skillet on the table.

Serve with fresh french bread (or any crusty bread you'd prefer). Makes approximately 6 servings.
