Blueberry Oatmeal Muffins

Introduction

Number of Servings: 12

Ingredients

    Flour - 2 1/2 cups
    brown sugar - 1/4 cup
    baking powder 2 Tablespoons
    1/2 cup quick or old fashioned oats
    1/4 cup flax seeds
    1 cup frozen blueberries

    1/4 cup egg substitute
    1/2 cup apple sauce
    1 cup 1% milk

Directions

Pre heat oven to 350 degrees.
Prepare muffin pan by spraying with non-stick spray or using muffin tin liners.

In a large bowl combine dry ingredients. After well mixed, add the frozen blueberries and mix quickly.

In a separate bowl, combine the egg substitute, apple sauce and the milk. Mix together, then add to the dry ingredients all at once.

Mix until just moistened and fill muffin cups using an icecream scoop.

Bake in a pre-heated oven at 350 degrees for 20-25 minutes or until cooked through and lightly browned on the top.

Cool on a wire rack and store refrigerated in a covered container.
