Chicken & Cheddar Casserole

Ingredients

.5 cup milk
1 large Onion
1 Can Tuna
1 Cup Reduced fat shredded cheddar cheese
1/2 Cup Baking mix
1/8 tsp. Pepper
2 Eggs
You can top with 1 tomato
Directions
Heat oven to 400 F. Grease 9-inch pie plate. Cook onion (butter optional - I use cooking spray), until onion is tender. Sprinkle tuna, 1/2 cup of the cheese and the onion in the pie plate. Stir together baking mix, milk, pepper and eggs with a fork. Pour in to pie plate. Bake 25 to 30 minutes or until knife inserted in center come out clean. Top with tomatoes and remaining cheese. Bake 3 to 5 minutes longer or until cheese is melted. Cool 5 minutes.
