Low Fat Veggielicious Chili

Introduction

This is a great hearty meat and bean chili. Excellent source of veggies and fiber and can be made in a slow cooker.

I add all kinds of veggies, depending on what I have available (corn, onions, carrots, tomatoes, bell peppers, jalapenos, etc.).

Any beans work. Pinto beans are excellent as well.

Number of Servings: 20

Ingredients

    2 cups Carrots coined
    1 lb Ground Beef 93% Lean
    28 oz. Crushed Tomatoes,
    1 small can Tomato Paste
    4 cans Beans, black, (8 cups)
    1 Cans Kidney Beans, (2 cups)
    3 cups Onions, raw, , chopped
    4 cupa Chicken Broth (low sodium)
    1 cup Red, & Yellow Peppers diced,
    Pepper, red or cayenne, 1 tbsp
    Chili powder, 5 tbsp
    Cumin, .25 cup
    Garlic, .25 cup
    Olive Oil, 3 tbsp
    28 oz can Peeled Whole Tomatoes in Tomato Juice

Directions

Makes 20 servings.

Brown beef, drain fat & pat with papertowl to get excess fat off (if any). Put beef in bowl.

Clean pan and sautee onions and garlic in oil on low heat until clear.

Add in Carrots (sliced into thin coins) and chopped bell peppers.

Once all veggies are tender, add in chicken stock, crushed tomatoes, whole peeled tomatoes, tomato paste. Stir.
Rinse 4 cans (about 8c. of black beans and 1 can (about 2 c.) red beans and add in.

Add in Beef and spices (to taste).

Simmer on low heat for 1 hour.
