Chock Full of Veggies Loaf

Introduction

Lots of vegetables here. Low-fat vegetarian comfort food if ever there was! If desired, you can subsitute reconstituted textured vegetable protein (TVP) for the Boca product. Lots of vegetables here. Ingredients

    1/3 cup onion, diced
    12 cup green bell pepper, diced
    1/4 cup celery, diced
    1 cup (raw) mushrooms, diced
    2 cloves garlic, diced
    1/2 cup Kellogg's All-Bran cereal
    2 sleeves (four 57-ounce servings) Boca meatless Ground Burger
    1 cup tomato sauce, DIVIDED (1/2 cup and 1/2 cup)
    Herbs, spices, seasoning to your taste (such as basil, oregano, black pepper)


Directions

Makes four servings.

Briefly sautee the vegetables with non-stick spray.

Mix the sauteed vegetables and all other ingredients in a loaf pan. (For easier serving, line the pan with aluminum foil, allowing the edges to come up and over the top of the pan.)

Combine tomato sauce and seasonings of your choice, spread over the top of the loaf. Bake uncovered for 35 minutes at 375 F. Allow to sit 5-10 minutes before serving.
