Introduction

Basically I mixed every vegetable in my house together in this very filling stir-fry. Basically I mixed every vegetable in my house together in this very filling stir-fry.
Number of Servings: 4

Ingredients

Bird's Eye Seven Veggie Stir Fry, 4 cup
Green Peppers (bell peppers), 1 cup, chopped
Peppers, sweet, red, fresh, .5 cup, chopped
    Onions, raw, 1 cup, chopped
    Celery, raw, .5 cup, diced

El Pollo Loco, Jalapeno Hot Sauce, 4 serving
    Parsley, dried, 2 tbsp
    Garlic powder, 1 tbsp

Chicken Breast, no skin, 4 ounces (remove)
    Pineapple, canned, 1 cup chunks

    Hunts Diced Tomatoes, 1 serving
    Spinach, fresh, 3 cup
La Choy's jar of Sweet and Sour Sauce
Mahtama Brown Rice, 1 cup dry

Directions

In water or pineapple juice cook the first five ingredients (veggies mix, peppers, onions and celery). I used a broccoli, carrots, beans and baby corn stir fry.

After veggies are tender add the spices (garlic and parsley) and hot sauce. Stir and simmer a little.

Then add the chicken and canned pineapple. Put a little juice in there and let them cook longer.

At the end let the tomatos begin get warm and the spinach begin to wilt. Add the sweet and sour. Warm.

Serve over rice.

This dish is four large, delicious servings. If wanted you could make it smaller servings for less calories.
