Mashed Cauliflower

Number of Servings: 4

Ingredients

    1 head of cauliflower, cut into florets
    .25 cup low fat cream cheese
    1 tbsp fresh thyme, chopped
    salt and pepper to taste

Directions

Bring a large pot of water to a boil and add cauliflower. Boil until cauliflower is tender. Drain and return to hot pot. Add the rest of the ingredients and season with salt and pepper. Mash with potato masher until desired consistency.
