Fried Corn and Onions

Introduction

This may be two flavors you never thought would go together, but it'll blow you away with its simplicity and taste! This may be two flavors you never thought would go together, but it'll blow you away with its simplicity and taste!
Number of Servings: 6

Ingredients

    NOTE: Read "T" as tablespoon, "t" as teaspoon

    3 cups frozen corn, thawed
    3/4 medium onion
    1 T Country Crock (Calcium enriched) spread
    1/2 t minced garlic
    1/2 t sugar
    1 dash salt
    1 dash pepper

Directions

Thaw corn and dice onion.

Melt butter in skillet and add onions and garlic. Cook the onion until it starts to "yellow." This means the onion is almost done.

Add the sugar to the onion and stir well. Allow to cook for 1 minute.

Add corn, salt, and pepper. Stir well.

Allow to saute until corn is done, stirring only 2 or times.

Recipe makes 6 servings; serving size = 1/2 cup

  • I made this but I left out the salt, pepper and used brown sugar. Simple and delicious without all of the calories from the milk that I usually add to fried corn. Thanks. - 6/8/11
