Introduction

A lighter and healthier version of italian style stuffed peppers. A lighter and healthier version of italian style stuffed peppers.
Number of Servings: 6

Ingredients

    3 sweet bell peppers (red orange or yellow work best)
    10 oz 93/7% lean ground beef (or turkey)
    2 cloves garlic, finely chopped
    1 large onion, diced
    1 cup uncooked brown rice
    1/2 cup fat free mozzarella

Directions

Preheat oven to 375. Boil the peppers for 3 to 5 minutes. Remove from heat and let rest on a paper towel. Cook brown rice according to the package. Cook ground beef, onions, and garlic until beef is browned. Drain any fat. Add tomatoes and cooked brown rice.

Slice peppers in half, lengthwise, and remove seeds and inner membranes. Stuff each pepper half with the meat mixture. Sprinkle mozzarella on each pepper. Bake for approximately 20 minutes.
